Pistachio is always my favourite choice in any desserts or cakes. Not only it is flavourful, this nut is super heathy. Pistachio is cholesterol-free, and is a great source of nutrients, protein and antioxidants.
My Soft Baked Pistachio Cookies are so delicious. They are great for sharing at parties or special events. This recipe makes 24 cookies. They are best if consume within 3 days.
Ingredients:
115g Butter
1 Whole Egg
110g White Sugar
50g Brown Sugar
70g Pistachio Paste
1 tsp Vanilla Extract
125g Cake Flour
5g Corn Starch
3g Baking Soda
65g Roasted Pistachio
40g Dark Chocolate 55%
40g DarkChocolate 70%
Methods:
Cream the butter in the bowl.
Add liquid egg, one-third at a time, mix with butter until no liquid can be seen.
Add white sugar and brown sugar to butter. Mix until butter is thorough and consistent.
Add pistachio paste and vanilla extract. Mix until butter is thorough and consistent.
Sift cake flour, baking soda and corn starch into the bowl.
Fold the flour and butter, until the batter is thorough and consistent.
Add dark chocolate chips and roasted pistachio to batter. Mix until batter is thorough and consistent.
Cover tight with plastic wrap. Chill in fridge for at least 20 minutes.
Preheat oven to 175C.
Scope the cookie batter onto baking tray.
Decorate cookie batter with garnish (optional).
Bake at 175C for 8 to 10 minutes. Cookies are ready when the edges 'caramelizes', turns brown.
Baking temperature and time may vary depends on your oven.
