Earl Grey Madeleine Cakes

Earl Grey Madeleines are easy to make. With few baking tools and limited time, anyone can make them at home. Madeleine cakes are great for sharing in parties, or serve as daily snack.


Ingredients

50g Whole Egg
35g White Sugar
10g Honey
20ml Earl Grey Milk
65g Butter, melted and cooled at room temperature
65g Cake Flour
3g Baking Powder

Method


Mix egg and sugar in a mixing bowl, until the liquid turns pale and thick.

Add honey, earl grey milk and butter to mixing bowl. Mix until the liquid is consistent.

Sift cake flour and baking powder to a clean bowl.

Pour 1/2 of egg liquid into flour bowl. Fold the flour and liquid until no flour can be seen. Repeat this step two times until all ingredients are well incorporated.

Cover the bowl with plastic wrap. Chill in fridge for at least 30 minutes.

Preheat oven to 190C.

Grease madeleine shell baking mould with butter. Dust baking mould with flour.

Scope the cake batter to madeleine baking mould, 2/3 filled.

Tape the baking mould twice, then place it into the oven. 

Bake for 13 minutes at 190C, or until the edges of madeleine cakes caramelised.
