Ingredients for Lemon Cake
Butter 55g
Sugar 45g
Egg Yolks 40g
Lemon Juice 20ml
Vanilla Extract 5ml
Plain Yogurt 60g
Lemon Zest 3g
Flour 100g
Baking Soda 2g
Egg White 60g
Sugar 50g
Line cake pan with parchment paper. Preheat oven to 170C.
Mix butter and sugar until well blended.
Add egg yolks, mix until well blended.
Add lemon juice and vanilla extract, mix until well blended.
Add plain yogurt, mix until well blended.
Fold sieved flour and baking soda into mixture, until well blended.
In a new clean bowl, beat egg white and sugar until firm peak.
Fold egg white into flour mixture, until texture is consistant.
Pour the mixture into cake mould. Bake at 170C for 20 minutes, then160C for another 10 minutes.
