Chocolate Tarts

Ingredients for Tart Shells

Butter    60g

Icing sugar    50g

Salt    1g

Egg yolk    20g

Vanilla extract    3g

Flour    100g

Cocoa Powder 10g

Methods

Lightly grease tart mould.

Mix butter, icing sugar and salt until well blended.

Add egg yolk and vanilla extract, mix until well blended.

Sieve flour and cocoa powder, mix with butter mixture will well blended.

Roll the dough to 3 mm thick. Cut the dough and place into tart shells.

Poke holes at the bottle of tart shells. 

Place baking stones over tart shells, and bake at 180C for 15 minutes.

Place on cooling rack, set aside for chocolate fillings.


Ingredients for Chocolate Fillings

Dark chocolate 50%    55g

Dark chocolate 70%    15g

Cream    120g

Egg    20g

Methods

Melt dark chocolate over hot water bath.

Warm cream over low heat until 50C.

Mix dark chocolate with cream until well blended.

Add egg, mix until well blended.

Pour chocolate fillings into chocolate tart moulds.

Bake at 160C for 10 minutes.

Place on cooling rack, set aside for chocolate glaze and decoration.


Ingredients for Chocolate Glaze

Dark chocolate compound    35g

Milk    20g

Corn Syrup    3g

Methods

Melt dark chocolate compound over hot water bath.

Add milk and corn syrup, mix until well blended.

Pour onto chocolate tarts. Decorate with garnish.
